Leftover Zucchini...

I'm sure that I'm not the only one who has had soooo many zucchini that you don't know what to do with them...

So I got this delish recipe from a friend...don't knock it until you try it. mmm...mmm...

It is called Zucchini Desert Squares and it tastes exactly like an apple pie and is sooo easy. My mom and I made extra filling, froze it and will use it again when we no longer have zucchinis. Try it! Enjoy!!!

CRUST:
4 C flour
2 C sugar
1/2 tsp ground cinnamon
1/2 tsp salt
1 1/2 c cold butter or margarine

In a bowl, combine flour, sugar, cinnamon and salt. Cut in butter until crumbly; reserve 3 cups. Pat remaining crumb mixture into the bottom of a greased 13"x9"x2" baking dish. Bake at 375 for 12-15 min. Meanwhile make filling.

FILLING:
8-10 C cubed, seeded, peeled zucchini. ( We just used 2 REALLY big ones...you know the ones that hide and then whamo! there they are and you don't know what to use them for...this recipe works best with these ones :) )
2/3 C lemon juice
1 C sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg

Place zucchini and lemon juice in a saucepan and bring to boil. Reduce heat; cover and cook for 6-8min or until zucchini is crisp and tender. Stir in sugar, cinnamon and nutmg; cover and simmer for 5 minutes. (mixture will be thin) Take crust out of oven, spoon filling over crust; sprinkle filling with reserved crumb mixture. Bake at 375 for 40-45minuses or until golden. Yield: 16-20 servings

To make it even better top it with homemade cool whip:

1 bottle heavy whipping cream
sugar
vanilla

Beat whipping cream until it can stay "peaked." Add sugar and vanilla to your specific liking. (I never measure...just dump and taste...dump and taste...works out great for me)

this looks absolutely delish! Good idea to post good food you've found and made! I heard you'll prob be in jo town early next year! can't wait to have you, Im in your ward now so we'll have fun. We went to cody and kylie's for dinner and "the office"... enjoyed ourselves first rate! we'll have to do the same.
